An alpha-text (term I invented) can be formatted as poetry or prose. The only rule is that the first word begins with A and each succeeding word takes the next letter of the alphabet.
Alpha 1
Abstemious baboons climbed down Everest.
Forbidden golfers had irony jettisoned.
Knowing life meant no obligation, people questioned reality.
Some talkers understood volumes:
Why x-ray zombies?
Alpha 2
Augmented beauticians colourized Darling.
Each fouled ghost hovered, indeterminably.
Jack’s kaleidoscope lost meaning. Normal
openings proved questionable. Roughly suggesting truths,
uncles vowed wildly. Xerxes yelled “Zero!”

The accepted term, I think, for what you are describing is an ‘abecedarian’ — in which the first letter of each line or stanza follows sequentially through the entire alphabet
